Dhotel Patisserie, owned and run by Jean-Baptiste Dhotel, an award-winning pastry chef, specialise in the creation of fine croquembouches for every special occasion. Based in Friston near Aldeburgh in Suffolk, we cater for weddings and birthdays, anniversaries, parties and special events of all kinds.

 

The name “croquembouche” comes from ‘croque en bouche’ which literally translated means ‘crunch in the mouth’. A traditional croquembouche is created to adorn wedding cakes, christening cakes and anniversary cakes and is usually, pyramid shaped and decorated with sugar art, but the shape can be varied upon request. We have in the past created croquembouche in the shape of old-fashioned limousines, wishing wells, windmills, churches and even Venetian gondolas.

 

Croquembouches are made from profiteroles which are normally filled with a vanilla pastry cream and glazed with caramel. The fillings and glazes can however be altered to taste and others have been filled or glazed with vanilla, chocolate and coffee. The sugar art decoration could take the form of sugar flowers, leaves, ribbons, heart shapes or any other form of pastillage.

 

Croquembouches can be produced for parties of any size. Each one can serve from 50 to 250 people. Our croquembouches are delivered and set up with cake stands, free of charge to anywhere within a 40 mile radius of our kitchen. Each cake comes with 4 profiteroles per person and the decoration of your choice.
